Unlike the lean muscle meat of the rest of the animal, a beaver's tail is a highly nutritious, calorie-dense organ that serves as a primary fat storage site for winter survival. It is exceptionally rich in healthy traditional fats, containing approximately 32 grams of fat per serving compared to just 1 gram in beaver loin. Research on European beavers indicates that the tail consists of about 61.7% fat, featuring a unique profile dominated by polyunsaturated fatty acids (PUFAs), including a high concentration of beneficial omega-3 alpha-linolenic acid (ALA). Additionally, the tail is a superior source of fat-soluble vitamins, offering significantly higher levels of Vitamin A (retinol) and Vitamin E (α-tocopherol) than muscle tissue, along with the highest total antioxidant capacity found in any part of the beaver. While it is lower in protein than other cuts, it still provides a good amount at roughly 11.6%, making it a prized historical delicacy for trappers and indigenous communities needing sustained energy during harsh winters.
